Mediterranean Egg Casserole

Perfect breakfast combination of eggs, feta, cherry tomatoes and Greek yogurt to put together for a light-dish rich in Mediterranean taste! For 8 servings.

INGREDIENTS:

  • 10 eggs (depending on servings)
  • 1 cup cherry/ dried tomatoes
  • 1 cup crumbled feta
  • 120 g Greek yoghurt
  • Chopped kale
  • 1 sliced green onion
  • 3 sliced red bell peppers
  • 2 tablespoon extra-virgin olive oil

INSTRUCTIONS:

  • Preheat the oven to 350 degrees Fahrenheit
  • Heat up a skillet and when it’s warm, add the extra-virgin olive oil
  • Add the green onion, red bell peppers and kale until saute. Set aside when they’ve started taking colour.
  • In a bowl, crack the eggs and whisk them up with yogurt and the salt.
  • Put the vegetables in the bowl and mix with eggs
  • Move to a buttered baking tray or dish and bake for around 35 minutes

Mediterranean Baked French Toast Challah

With fresh fruits of your choice, nutritious & delicious honey, and challah bread this recipe couldn’t be easier…and more tasteful! Yummy!

INGREDIENTS:

  • 6-8 slices of Challah Israel bread
  • 3 eggs
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 120gr Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2cup almond milk (or a regular low-fat milk)

INSTRUCTIONS:

  • Preheat the oven to 350 degrees Fahrenheit
  • On a baking tray, butter the first slice of bread and put the buttered side facing down
  • Continue with the other slices, tearing up buttered bread to cover any gaps and corners
  • In a bowl, crack the eggs and whisk together with the vanilla, honey and Greek yogurt. Pour it over the arranged bread and add the milk
  • Bake for around 30 minutes, add the seasonal fruits of your choice e.g cherries, strawberries, drizzle with honey and serve when it gets cool.Enjoy!

Bonus: Summer Side-dish Idea Watermelon Cups with Feta

A refreshing bite for appetizer or after breakfast, perfect for these hot summer days and under 50 calories!

INGREDIENTS:

  • 1 cup crumbled feta
  • 15 chilled watermelon cubes without their seeds
  • 1 tablespoon fresh mint
  • 1 teaspoon lime juice

INSTRUCTIONS:

  • In a bowl, mix together the feta, lime juice and mint
  • Open up a little hole in the centre of each cube using a small spoon
  • Stuff the holes with the mixture
